I am missing the Carolinas already, so I decided to make Carolina Low Country Shrimp Boil for dinner. Here is my favorite recipe:
4 quarts (16 cups) of water
½ cup Old Bay seasoning
2 TBSP salt
8 medium red potatoes, quartered
2 large onions cut into wedges
2 pounds smoked sausage cut into 2 inch pieces
8 pieces of corn on the cob (I use the 2 inch frozen pieces)
1 bag cooked, frozen shrimp (feel free to use fresh!)
Bring water, salt, and seasoning to a boil in a 12-quart stockpot on high heat. Add potatoes and onions. Cook 8 minutes. Add smoked sausage. Cook 5 minutes. Add corn. Cook 7 minutes. Add shrimp. Cook 4 minutes (if using fresh shrimp, cook until pink).
Drain cooking liquid and pour contents of pot into a large serving bowl or platter. Add butter to corn and potatoes if desired. Enjoy!
And for dessert . . . This is a variation of my Ice Cream S’more recipe:
1 graham cracker broken in half (or two of any other type cookie you desire)
Spread whipped cream cheese on each graham cracker or cookie.
Flatten 1 scoop of pumpkin pie ice cream onto one of the crackers or cookies.
Add a squirt of Ready Whip or Cool Whip on top of ice cream.
Place the other cracker or cookie on top and enjoy!
